Co-founder Joey Schmitz built his first smoker as a publicity stunt for a non-profit. Welding together recycled bicycle parts and 55-gallon drums, this first smoker allowed Bike to the Beach to promote their charity ride to millions of people attending one of the largest national BBQ competitions: The National Capital BBQ Battle. The first competition was a success and there was a quick learning curve toward a second custom smoker, this time featuring a rudimentary adaptation of an old technology to ensure fall-off-the-bone BBQ every time — Steam Temperature Regulation (we like to call it STR). Eventually, Joey’s creations went on to place in the top tiers at the DC BBQ Battle.
Then comes [SMOKESTACK]™ co-founder Esther Kwon. With her degree in engineering, and a love for food, efficiency and design, she is the inspiration behind the easiest-to-use backyard BBQ on the market! Before blasting away with welders and grinders, Esther spent months collaborating with Joey to design not only the smallest smoker on the market, but the smartest: the [SMOKESTACK]™!
Together, we have come up with a product that not only allows the average Joe (or Jane) to toss on a nice lump of meat but get something only Myron Mixon could cook. [SMOKESTACK]™ BBQ does it with your existing charcoal grill, meaning you don’t need all the cumbersome and complicated equipment competition and commercial guys rely upon.
STR is a fundamental feature on all of our smokers and smoker conversions. By creating a cook chamber which is 70–90% steam, our cookers hover at very consistent temperatures, usually right around 240°F, using standard damper settings.
Our design operates with most traditional charcoal grills, alleviating the need for duplicative devices or additional storage. If you have a charcoal grill, you have a place to burn charcoal and wood — available at a fraction of the cost of the competition.
A simple ability to control smoke. You can manually determine how much, if any, smoke and heat to send from the firebox to the cook chamber with simple open/close settings.
Simple dampers work because of our STR technology. Your minimum temperature holds at 215° automatically, and when you open the damper to the cook chamber, temps rise to perfect BBQ temperatures and hold for hours.
The bypass system lets the firebox continuously operate through refueling and meat harvesting without sending smoke into the cook chamber or your face. Load fresh fuel without opening the cook chamber or lifting the unit.
