ABOUT US

In a multi-billion dollar industry, no one makes a smoker where you can comfortably crack a cold beer and rest assured the temp in your cooker is perfect. It seems like the only way you can get some good BBQ all year round is to sit in a shack at a sticky table with flies and who knows what in the back, or to have that one friend who likes to spoil himself on a smoker that puts him out a few thousand dollars (we all have one).

Co-founder, Joey Schmitz, built his first smoker as a publicity stunt for a non-profit. Welding together recycled bicycle parts and 55-gallon drums, this first smoker allowed Bike to the Beach to promote their charity ride to millions of people attending one of the largest national BBQ competitions: The National Capital BBQ Battle. The first competition was a success and there was a quick learning curve toward a second custom smoker, this time featuring a rudimentary adaptation of an old technology to ensure fall off the bone BBQ every time -- Steam Temperature Regulation (we like to call it STR). Eventually, Joey’s creations went on to place in the top tiers at the DC BBQ Battle. Only problem with smoker v2 for your average home owner? It was a bear; just like all the other smokers out there on the market.

Then comes [SMOKESTACK]™ co-founder, Esther Kwon. With her degree in engineering, and a love for food, efficiency and design, she is the inspiration behind the easiest to use backyard BBQ on the market!   When Joey threatened to build an updated smoker, her familiarity with his past “bears” needed to be balanced with her desire to save space for her garden and entertainment areas for guests.  Before blasting away with welders and grinders Esther spend months collaborating with Joey to design not only the smallest smoker on the market, but the smartest: the [SMOKESTACK]™!

Together, we have come up with a product that not only allows the average Joe (or Jane) to toss on a nice lump a meat but get something only Myron Mixon could cook. FEATURES

Steam Temperature Regulation (STR).  

Steam Temperature Regulation is a fundamental feature on all of our smokers and smoker conversions.  By creating a cook chamber which is 70-90% steam, our cookers hover at very consistent temperatures, usually right around 240 degrees (F), using standard damper settings.  

Universal Fit

The functionality we’ve built into our design allows it to operate with most traditional charcoal grills, alleviating the need for duplicative devices or additional storage. Let’s face it, if you have a charcoal grill, you have a place to burn charcoal and wood. You don’t need a whole new unit to start creating smoked goodness.  At the same time, it means your new smoker (conversion) is available to you at a fraction of the cost of the competition.

Draft Flow Regulation

Instrumental to our devices is a simple ability to control smoke. You can manually determine how much, if any, smoke and heat to send from the firebox to the cook chamber with simple open/ close settings.  

Dampers

Simple dampers work because of our STR technology.  Funnel smoke and heat to the cook chamber or out of the device (see Bypass).  Either way, your minimum temperature will hold at 215 automatically and when you open the damper to the cook chamber, temps will rise to perfect BBQ temperatures and hold for hours.

Bypass

The bypass system on your [SMOKESTACK]™ BBQ allows the firebox to continuously operate through refueling and/or meat harvesting, without sending smoke into the cook chamber and/or your face, respectively.  By combining the bypass flu with a sufficiently sized chute, you can load fresh fuel into the firebox without opening the cook chamber, lifting the unit, or modifying the original grill bottom. Leave the dampers in bypass during ignition of the wood so that dirty “black” smoke does not enter your cook chamber.  When dirty smoke burns off after a few minutes,  adjust the damper to send smoke back into the cook chamber.

Generation 1: Kettle

Our first generation [SMOKESTACK]™ has been developed around the most basic and common of backyard charcoal grills: a 22” kettle grill.  Not only are these kettle grills common but they are cost effective. In fact, you can purchase a new [SMOKESTACK]™ and a new kettle grill of your choice for less than ½ the cost of an equally sized komodo style smoker. And with [SMOKESTACK]™ STR technology, you will be creating perfectly tender and reproducible cooks, every single time.

Generation 2: Watchman

The Watchman stove is an outdoor and tailgate specialty grill, which in itself already doubles as a firepit.  Our second generation STR is being developed to fit the Watchmen stove, proving the adaptability and versatility of our design, which is now shown with rectilinear outline instead of the cylindrical Generation 1.
